Trying to be healthy is not easy or delicious, usually. I tried a recipe for lunch yesterday that I loved! I am going to share it with you.

Lunch yesterday:
1/2 Chicken Breast, baked in Italian dressing the night before.
1 Carrot
2 Heads of Broccoli
Handful of grape tomatoes
1/2 Zucchini
1 Clove of Garlic
Dash Red Pepper
Pinch Basil, Oregano, Thyme
1oz Whole Grain Penne
Chop the carrot, broccoli, tomatoes and Zucchini put into a saute pan with two tablespoons water on medium heat and cover. Mince the garlic and add to pan along with red pepper and seasonings. Re-Cover. Let it steam until the veggies are nice and tender.
Meanwhile boil the pasta. Dice the chicken.
Once everything is cooked mix it all together with the pasta and chicken. Sprinkle with just a bit of parmesan cheese. Enjoy.
